Ingredients

  • 2 Zucchinis

  • 1/2 Cup of Plain Flour

  • 1/2 Cup of Soda Water

  • 1/2 Teaspoon of Salt

  • 1/2 Cup of Olive Oil

Directions

  • Slice the zucchini into thick pieces (around 1cm thick)
  • In a separate bowl, mix the flour, salt, and soda water removing any lumps with a fork. You should be left with a thick and smooth batter.
  • Using a fork, coat the zucchini lightly and evenly in the batter on both sides.
  • Add 2 tablespoons of olive oil to the frying pan and keep on medium heat.
  • Add the zucchini slice to the hot oil and cook for 5 minutes on each side until golden.
  • You can do this in batches but remember not to overcrowd the pan as too many can cause soggy zucchini slices.
  • Place a paper towel onto a plate and rest the fried zucchini on the paper towel to drain the excess oil.
  • With every batch, you cook add another 2 tablespoons before adding the zucchini.
